my favorite food blogs

I blame loads of school work+work+severe allergies making me not feel so hot. Ack. BUT! I was inspired this morning by a glorious post over at Love Veggies & Yoga! I glanced at the post this morning before class, couldn’t stop thinking about it throughout class and immediately upon getting home, I whipped out the VitaMix and went to work. The can of pumpkin puree was calling my name and the weather outside made this perfect! It’s been overcast and chilly, which I love! Fall is here. Leaves will start turning soon, though here in Denver, they aren’t as plentiful as in Michigan. I will soon be seeking out a cider mill/apple orchard to quench my ravenous desire for fresh donuts! and hot cider! I LOVE FALL high blood pressure. Back to the matter at hand. Love Veggies & Yoga‘s beautifu…

The Atkins Diet has been popular for year, Atkins make nutritionists mad by saying you can eat just about all the fat you want, as long as you don't eat many carbohydrates, sugar and bread. I like Atkins because I cook with butter. The Scarsdale Diet was a popular fad for several years, it's a chart in here indicating what you ought to weigh. It Says a woman five feet four ought weigh between 110 and 123 pounds. If you're a man five foot eight, Do…

Coconut Macaroons

Anyone who knows me knows that I look for any excuse to get in the kitchen at this point of my life. Working parties, work meetings, social gatherings, birthdays, showers, you name it. With my birthday being only a few days away, I am one step away from baking myself a birthday cake, but hopefully someone will beat me to that punch tourism industry news. Lucky for me, I work with a group of ladies who are as passionate about baking as I am. And with all of us being in the event planning world, we have to make it a big deal. So naturally when we were asked to host our co-workers baby shower/goodbye party, we went all out dessert wise. We went with a subtle, but oh-so-adorable, girl scout theme – all of us doing our take on a traditional girl scout cookie Enterprise IaaS Solution. So needle…

Burnt Earth

After stopping by 3 farmers markets 2 organic grocers and a Greek deli I found myself with an exotic assortment of rich coloured fruits and veggies. Overwhlmed with ideas, hunger and all the jarred beets in my fridge I juggled my thoughts in hope that my needs would come together. In relief I decided to leave the beets for another day, as I reached for the softest avocado all my thoughts slowly drifted into place thermal tea mugs. A chilled mango, avocado, and turtle bean salad was in the works. Drizzled with pumpkin oil and splashed with squeezed limes I garnishing with cilantro and tossed with zest one more time. What else I thought, turnips, blue spuds, sweet pots, something not to soft I thought. Garden carrots? Red white and orange crispy fire roasted carrots sound perfect. I grabbed…

Blackberry Oat Crisp

I received a Costco membership as a Christmas gift (thanks mom). Being vegetarian, the fact that they have fruits and veggies in such bulk is very VERY exciting.

So needless to say, my first shopping trip, I went produce crazy….which leads me here. I bought so much I couldn’t eat it fast enough. My blackberries started dropping like flies, so I quickly made the executive decision to bake with them tax loan.

Crisps, crumble, buckle, whatever. They’re all delicious. And they all can adapt to any fruit AACSB MBA.

Lemon Cream Cupcakes

When contemplating what to get people for birthdays, it usually boils down to the same question…what is their favorite food? Personally, my favorite gift to give is something I baked. I know it sounds like a cheap-skate out of actually buying a present, but I love it because it’s guaranteed to be a gift made with nothin but L-O-V-E. This recipe is absolutely no exception. I made these lemon clouds with my lemon-loving roommate in mind. Many a time I have found her standing in the kitchen, in all hours of the day and night, eating lemon slices with a sprinkling of sugar. Thus my inspiration for lemon cream cupcakes with a sour/sweet lemon buttercream. The cake portion of this cupcake is near perfection. Light yet rich and bakes up with a perfectly flat-ish top on which to pile up lots of s…
