MANY OF US HAVE A VAGUE idea that we could stand to lose a few pounds. bit with fresh herbs

Today I bring you the most delicious carrots in the history of mankind. At least I think so, and I think most of you would agree after you’ve taken a bite of one of these scrumptious little devils. First of all, there’s bourbon. Second of all, there’s maple syrup. Throw in some brown sugar, fresh herbs and just a sprinkling of salt and pepper and these bourbon maple glazed carrots have just leaped onto your Thanksgiving dinner table. Yes, they are that good. Are you sold yet? We have totally been down this little bourbon road before. I mean I’ve kind of been indulging in the stuff lately. cooking with it… brewing beer with it… drinking it straight out of the bottle… Kidding. Kidding! I swear, I do not have a “problem.” Please don’t judge me. In all seriousness though, I love to cook with…

transported me back to childhood

Chicken and Mushroom Clay Pot Rice is a picture-perfect Chinese comfort food dish. It has an incredible earthy flavor–courtesy of the classic combination of Chinese black mushrooms, wood ear mushrooms and lily flower–and the silkiest chicken you ever tasted. Autumn must be in the air, because I just had a hankering for a warming clay pot meal, and decided to adapt one of my mother’s best. You can omit the ingredients you can’t find, and even if it’s only the chicken, you’ll have one hell of a chicken dinner smartphone! My mom used to prepare this dish all the time in the steamer (without the rice) and served it family-style. In Cantonese, it’s called “waat gai” (滑鸡). The only literal translation I could muster up is “slippery chicken.” Basically, by steaming the chicken, it ends up with a…

they’ll come right out

I love my sugar cookies. I bake Sugar Cookie Cutouts every Christmas and enlist the help of my nieces to decorate them. My boys don’t have time for that business. The thing is, I like to enjoy sugar cookies without rolling out dough, and frosting and decorating each and every one. I had volunteered to make my boys’ baseball team dessert for their end of season party last week, and I was lacking time. I wanted something fun that everyone loved, so I decided to make these Frosted Funfetti Sugar Cookie Cups. Baking sugar cookies in muffin cups is a snap, and they’re thicker and oh-so-gooey. I topped them with vanilla icing, because it’s not a sugar cookie without icing. These cookies were some of the best I’ve tasted mobile device. I incorporated the team colors, which was the Cubs, i…

Take out of the skillet

Nachos are one of those foods that are so easy and so fun to serve to people. Any time they are presented at a party, they go within minutes. The thing with nachos is that you can pile any ingredients on top and they’ll likely turn out amazing. I wanted to do a twist on a steakhouse classic, so I came up with these creamed spinach and steak nachos. I’ve had the idea for these nachos floating in my head for a while. One of my favorite restaurants in Charleston and Columbia, SC is California Dreaming. They have the best salads ever (the dressing and the croissants? To die for!) and they have great nachos. They have all different kinds and each are delicious – seafood (sounds weird, but trust me, so delicious), BBQ chicken, and of course, creamed spinach Maggie Beauty. I wanted to do a play…

Soups Worth Making

Soups Worth Making I'm just home from Japan - thanks to an efficient series of buses, trains, planes, and one fabulously upholstered ferry. The trip started in Tokyo, then on to Kyoto, eventually making our way to the incredibly special island of Naoshima. While I get unpacked and settled back in to my regular routine, I thought I'd do a quick round-up of a few of my favorite soups from the archives, the ones that really stood out, the ones I love to revisit. I love a good pot of soup, and (particularly) this time of year, make them a couple times a week. And while the following have become some of my stand-bys, let me know if you have a soup recipe you think I'm missing out on. I'm always on the look-out for new ideas to try. In the meantime, I'll try to pull together some pics and a wri…
