Holiday Gingerbread Blondies

Makes 15-20 bars. Vegan, gluten free

Ingredients:

1 can chickpeas or white beans
1/4 cup nut butter (you can get away with 3 T nut butter plus applesauce or milk)
1/4 cup brown sugar
2 T molasses airtight storage containers
1 T ground flax
3 T quick oats (or more flax)
2 t vanilla extract
1 t cinnamon
1/2 t ginger hong kong hotel reservation
1/4 t nutmeg
1/4 t cloves

Directions: combine all ingredients in a food processor (I’m pretty sure I broke my blender making these, so I don’t recomend using that) until smooth. Adjust batter to taste–you may want to add a bit more sweetener. Pour/spoon batter into a greased 8X8 pan and bake at 350 for ~35 minutes (you want it to be slightly underdone so that the middle stays a little soft wisdom dairy!)
