a Clymate IQ
Ok, so this is a little strange to me. I have heard people taking NY Strip steaks and par cooking them in holding equipment. So I gave it a try to see what would happen. I set up our holding cabinet (a Clymate IQ) to 135F with 90% relative humidity hong kong hotel promotion.
Placed some steaks in it and probed them to watch the temps. In about 30min the steaks were holding tight at 130F. I let them stay like this for 2 hours. When I took them out they looked like some alien or something you would find at the bottom of an ocean… Grey masses of meat best water bottle.
However, I then seared them off and cut into them (no resting needed). Perfect MedRare. The taste was way better than I would have ever guessed. The great things about cooking like this is a very low amount of loss, fat does not pull the meat into to miss shaping it, and cooking times are lowered. This was a fun experiment Hong Kong Sightseeing.
