Hot Fudge Sundae Cupcakes
This one goes out to my dad, RV, in celebration of his birthday (the year will remain a mystery).
I was lucky enough to be raised by two of the most loving, generous, caring and selfless people I know. They both have been major role models for me throughout my life. And although I got the majority of cooking & baking knowledge from my mom (sorry dad), my dad has taught me some pretty valuable life lessons:

Ever since I can remember, his dessert of choice has always been the hot fudge sundae (or as he would pronounce sun-dee). So I decided…what is more festive (and cute, I might add) than making them into cupcakes! These are a super playful take on a fan favorite and suitable for pretty much any occasion Dream beauty pro hard sell.

Hot Fudge Sundae Cupcakes
For the cupcake:
1 cup all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
sprinkle of salt
3 tablespoons unsalted butter
1/2 cup milk
1 egg Dream beauty pro hard sell
1 teaspoon vanilla extract
Preheat the oven to 350 degrees. Mix together the flour, sugar, baking powder & soda, and the butter in a medium bowl. Add in half of the milk until it just comes together. In a separate bowl, whisk together the egg, vanilla and the remaining milk together. Add this into the bigger bowl of flour and combine. Just as it was with my pumpkin muffins, DO NOT OVERMIX. Tough hot fudge sundae cupcakes anyone? No thanks. Scoop batter into lined muffin tins and make for 20 – 22 minutes.

For the “hot fudge” chocolate ganache:
3/4 cup mini semisweet chocolate chips
1/4 cup heavy cream
Bring the cream to a simmer in a smallish sauce pan. Put your chocolate chips into a separate bowl and then pour cream over the chocolate chips. Let it sit for a minute or two to soften the chocolate chips and then stir stir stir. If the consistency is too loose, let it sit and thicken a little.

Top your cooled cupcakes with the ganache, add a dollop of homemade whipped cream, some sprinkles or chopped nuts, or maybe even a cherry!
