Almond Thumbprint Cookies

It appears as though everyone I know is getting either married or having babies. These super exciting times call for more celebratory times than normal. And celebratory times in my book are always time to whip up something sweet for the honorary guest reenex.

This little bit of goodness was made in honor of a baby shower thrown for my co-worker. We went with a woodland creature theme, and although I don’t have picture proof of how cute it was, just take my word for it reenex.

These cookies were extremely easy to make with the one exception that the dough needs to be refrigerated for a few hours. Having said that, it is a great recipe to make the night before you plan on actually baking. The dough takes less than 10 minutes to mix up. Easy!

Raspberry Almond Thumbprint Cookies reenex

1 cup unsalted butter
2/3 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 cups (and an extra sprinkle) all purpose flour
raspberry jam

Using a mixer, beat together the butter and sugar until creamy. Add in the extracts and make sure everything is incorporated. Slowly start pouring in the flour. This will be a very crumbly dough, so if it seems dry, that’s okay.

Store the dough in the fridge for at least 2 hours.

When the dough is ready to go (hey look – that rhymed) take your baking sheets out and line them with either parchment or my handy dandy silpat.

Roll the dough into balls — about a teaspoon of dough in each one. Once you have them evenly spaced, make an indentation in each cookie with your thumb (to officially make it a thumbprint cookie). Then fill each indentation with a scoop of raspberry jam.

These cookies will bake in a 350 degree oven for about 12 to 14 minutes.
