After stopping by 3 farmers markets 2 organic grocers and a Greek deli I found myself with an exotic assortment of rich coloured fruits and veggies. Overwhlmed with ideas, hunger and all the jarred beets in my fridge I juggled my thoughts in hope that my needs would come together. In relief I decided to leave the beets for another day, as I reached for the softest avocado all my thoughts slowly drifted into place thermal tea mugs.
A chilled mango, avocado, and turtle bean salad was in the works. Drizzled with pumpkin oil and splashed with squeezed limes I garnishing with cilantro and tossed with zest one more time. What else I thought, turnips, blue spuds, sweet pots, something not to soft I thought.
Garden carrots? Red white and orange crispy fire roasted carrots sound perfect. I grabbed the bunch by their long coarse green hairs and spread them across the pan like a rainbow glazing them in pumpkin oil. Large chunks of garlic, fennel and corn leaves were laid across the top with a sprinkle of sea salt, cracked pepper and a taste flush splash of tomato vinegar cheap bank loan.
